Watch the video and learn how to make zoodles. It’s fast and fun, and you will have a healthy dinner ready in no time. Zoodles are noodles made by spiralizing zucchini. Uncooked zucchini has a similar texture to regular noodles and is a perfect base for my easy, slightly spicy peanut sauce.

Peanut Butter Zoodles
Zucchini takes the place of noodles in this dish with a zesty peanut sauce
Equipment
- Spiralizer
- Whisk
Ingredients
- 2 medium zucchinis
- 1/2 cup julienned snow peas
- 1/2 cup thinly sliced carrots
- 1/2 cup julienned red peppers
- 1/3 cup sliced green onions
- 1/3 cup chopped peanuts
Peanut Sauce
- 1 cup creamy peanut butter
- 1 tbsp sriracha
- 1/4 cup fresh lime juice
- 1/4 cup honey
- 2 tbsp sesame oil
- 2 tbsp grated fresh ginger
- 2 cloves finely minced garlic
- 1/3 cup soy sauce
- 1 tsp rice vinegar
- 1/4-1/2 cup water as needed to thin
Instructions
- Spiralize zucchini with a spiralizer and cut up the vegetables. Add them all to a big bowl.
- Combine all of the sauce ingredients in a small bowl, stirring with a whisk.
- Add the sauce and the chopped peanuts to the bowl with the vegetables and the zoodles.
- Toss the zoodles with everything to coat and enjoy!
