Zoom: Here come the Zoodles!

Watch the video and learn how to make zoodles. It’s fast and fun, and you will have a healthy dinner ready in no time. Zoodles are noodles made by spiralizing zucchini. Uncooked zucchini has a similar texture to regular noodles and is a perfect base for my easy, slightly spicy peanut sauce.

I used snow peas, carrot and red peppers in my recipe, but you can use any fresh crunchy vegetable you like. Leave me a comment and let me know what veggies were good in yours!

Peanut Butter Zoodles

Zucchini takes the place of noodles in this dish with a zesty peanut sauce

Equipment

  • Spiralizer
  • Whisk

Ingredients
  

  • 2 medium zucchinis
  • 1/2 cup julienned snow peas
  • 1/2 cup thinly sliced carrots
  • 1/2 cup julienned red peppers
  • 1/3 cup sliced green onions
  • 1/3 cup chopped peanuts

Peanut Sauce

  • 1 cup creamy peanut butter
  • 1 tbsp sriracha
  • 1/4 cup fresh lime juice
  • 1/4 cup honey
  • 2 tbsp sesame oil
  • 2 tbsp grated fresh ginger
  • 2 cloves finely minced garlic
  • 1/3 cup soy sauce
  • 1 tsp rice vinegar
  • 1/4-1/2 cup water as needed to thin

Instructions
 

  • Spiralize zucchini with a spiralizer and cut up the vegetables. Add them all to a big bowl.
  • Combine all of the sauce ingredients in a small bowl, stirring with a whisk.
  • Add the sauce and the chopped peanuts to the bowl with the vegetables and the zoodles.
  • Toss the zoodles with everything to coat and enjoy!
