Stuffed Zucchini Ribbons Recipe
How to make the ribbons
Cut off the stem and the end of the fruit and use a flat vegetable peeler to make ribbons. Try to make them a consistent thickness by applying the same pressure to each swipe of the peeler.
Put ribbons in a strainer and lightly coat with coarse salt. Salt helps to remove water from the vegetables. If you do not do this your dish will be very runny when you take it out of the oven after it bakes. Let sit for 30 minutes and then rinse and pat dry.
How to make the cheese stuffing
Mix together in a bowl:
15 oz container Ricotta cheese
8 oz shredded mozzarella
¼ cup parmesan cheese
1 egg
2 teaspoons dried oregano
1 teaspoon salt
1 teaspoon black pepper
How to make the sauce
Mix a jar of tomato sauce with 3 Tablespoons of tomato paste.
How to roll up the zucchini ribbons
Now it is time to assemble the dish. Cover a rectangle baking dish with a layer of sauce. Put 3 strips of ribbons together and add a heaping tablespoon of cheese mixture. Roll up. Add to dish and continue until you run out of zucchini ribbons or cheese mixture.
Bake for 20 minutes at 350 degrees covered with foil. Uncover and add a thin layer of tomato sauce on top of the rolls and bake another 25 minutes. Sprinkle with shredded or shaved parmesan and serve.

Equipment
- 1 wide vegetable peeler
Ingredients
- 4 Medium size Zucchinis
- 1 15 oz Container of Ricotta cheese whole milk or low fat
- 1 8 oz Bag shredded Mozzarella Cheese whole milk or low fat
- 1 1/4 cup shredded parmesan cheese plus a few tablespoons to spread on top at the end
- 1 egg
- 2 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
- 1 24 oz jar tomato sauce
- 3 tbsp tomato paste
Instructions
