Everything you will need to make this refreshing mojito

Nothing says summer more than sipping a cool sparkling drink topped with a spring of freshly picked mint. Mixed drinks are usually a rare treat for me as they are packed with calories. What if you could have the taste of a fancy cocktail without the added sugar to your diet? Let me introduce you to the skinny mojito. I used blueberries as the added fruit to this recipe, but you can add any seasonal fruit you like. My other favorite fruits to add are strawberries, watermelon, and peaches.

The first step is to muddle the citrus juices with the mint and the fresh fruit. This year my only home grown element is the mint. The blueberries are from a pick your own farm in the area. I have started growing a key lime and a Meyer lemon tree in pots on my deck so hopefully next summer I will have my own citrus harvest.

The next step is to add the muddled ingredients, rum, diet tonic water, and ice cubes to the shaker. Gently shake for 10 seconds. Pour the liquid through the shaker sieve top into the two 16 oz. glasses. this keeps the solid pieces of fruit and mint from getting in to the glasses. Add some tonic water and ice cubes to fill the glasses. Garnish with fresh whole blueberries and mint springs and enjoy!

Servings 2 people

Equipment

  • Shaker

Ingredients
  

  • 1/2 cup fresh blueberries
  • 2 fresh peppermint leaves or 4 fresh spearmint leaves
  • 3 tsp fresh lemon juice can substitute with bottled if need be
  • 3 tsp fresh lime juice can substitute with bottled if need be
  • 3 shots Bacardi Limon rum
  • 10 ounces diet tonic water
  • 4 ice cubes
  • Mint leaves and blueberries for garnish

Instructions
 

  • Muddle blueberries, mint, and citrus juices together.
  • Add the muddled mix to a 32 oz drink shaker.
  • Add the Rum, tonic water and ice cubes to the shaker and shake the ingredients together for 10 seconds and pour into the two 16 oz glasses. Add ice or tonic water to fill glasses.
  • Garnish with whole blueberries and mint sprig.
