
Kale with Soba Noodles and Avocado Miso Sauce Recipe


Soba noodles have a great earthy flavor and cook up very quickly. Cook the noodles in boiling water for 5 minutes, then rinse with cold water and drain. Set aside.

Cut the kale leaves from the large stems. The stems are not edible as they are very hard and fibrous. Toss the leaves with olive oil and massage the leaves.


To make the sauce, combine avocado, garlic clove, miso, olive oil and lime juice. Blend in a mini
food processor. If the consistency of the sauce is too thick, add water a little at a time until
desired consistency. It should be thin enough to pour, but thick like a creamy dressing.


Gently mix kale, noodles, and sauce with a spoon. Garnish with sesame seeds. Serve at room temperature.

- 1 bunch Kale
- 2 bundles Soba Noodles
- 1 whole ripe Haas Avocado
- 1 Clove fresh garlic
- 1 tbsp Olive oil extra virgin
- 3 tbsp white miso paste
- 1 whole lime juiced
- 2 tbsp water as needed
- 1 tbsp sesame seeds for garnish
