Cook the soba noodles in boiling water for 5minutes, then rinse with cold water and drain.
Cut the kale leaves from the large stems. Toss the leaves with olive oil and massage the leaves.
To make the sauce combine avocado, garlic clove, miso, olive oil and lime juice. Blend in a mini food processor. If the consistency of the sauce is too thick, add water a little at a time until desired consistency. It should be thin enough to pour, but thick like a creamy dressing.
Gently mix kale, noodles, and sauce with a spoon. Garnish with sesame seeds. Serve room temperature.
