Kale with Soba Noodles and Avocado Miso Sauce

Ingredients
  

  • 1 bunch Kale
  • 2 bundles Soba Noodles
  • 1 whole ripe Haas Avocado
  • 1 Clove fresh garlic
  • 1 tbsp Olive oil extra virgin
  • 3 tbsp white miso paste
  • 1 whole lime juiced
  • 2 tbsp water as needed
  • 1 tbsp sesame seeds for garnish

Instructions
 

  • Cook the soba noodles in boiling water for 5minutes, then rinse with cold water and drain.
  • Cut the kale leaves from the large stems. Toss the leaves with olive oil and massage the leaves.
  • To make the sauce combine avocado, garlic clove, miso, olive oil and lime juice. Blend in a mini food processor. If the consistency of the sauce is too thick, add water a little at a time until desired consistency. It should be thin enough to pour, but thick like a creamy dressing.
  • Gently mix kale, noodles, and sauce with a spoon. Garnish with sesame seeds. Serve room temperature.
