Valentines day is around the corner. Why not show someone you love them by cooking a healthy treat? These apricot candies are delicious and healthy for you.
Line a baking sheet with parchment paper and set aside. In a small saucepan, combine the sugar, cinnamon stick, and water. Bring to a boil. Reduce heat to medium-low and add the apricots. Simmer the apricots in the sugar mixture for 10 minutes. Remove apricots with a slotted spoon and place on the parchment paper so they are not touching.
Melt chocolate in a small microwave dish. Microwave on high for 1 minute then mix. Return to microwave at 30 second intervals until the chocolate is melted and smooth. (Usually this takes 2-3 minutes total.) Chop pistachio nuts and put on a small plate. Dip each apricot in the chocolate first and then the pistachios.
Once all of the apricots have been dipped, place the baking sheet in the refrigerator for 60 minutes to set the chocolate. Store the candies in containers (refrigerated), the rows separated with wax paper. Makes 30 candies.
