Avocado Toast with Smoked Salmon

Colorful brunch served with healthy mixed greens
- 2 large thick slices of crusty bread
- 1 whole avocado
- 1 tsp lemon juice
- 1 Tbs Olive oil
- 4 oz smoked salmon, cut into 2-inch pieces
- 2 large eggs
- 2 Tbs Fresh chopped chives
- 1-2 cups mixed baby greens
Lightly toast bread
mash avocado coarsely and mix in lemon juice and olive oil
Fry eggs however you like them cooked
Spread avocado mixture on each toast, top with egg, and sprinkle smoked salmon pieces and chives on top. Salt to taste
Add mixed baby greens to the plates and serve.
