Avocado Toast with Smoked Salmon

Colorful brunch served with healthy mixed greens

Ingredients
  

  • 2 large thick slices of crusty bread
  • 1 whole avocado
  • 1 tsp lemon juice
  • 1 Tbs Olive oil
  • 4 oz smoked salmon, cut into 2-inch pieces
  • 2 large eggs
  • 2 Tbs Fresh chopped chives
  • 1-2 cups mixed baby greens

Instructions
 

  • Lightly toast bread
  • mash avocado coarsely and mix in lemon juice and olive oil
  • Fry eggs however you like them cooked
  • Spread avocado mixture on each toast, top with egg, and sprinkle smoked salmon pieces and chives on top. Salt to taste
  • Add mixed baby greens to the plates and serve.
