
Cute crunchy Cukes

Cucumbers are one of the few vegetables that I grow in my garden from seeds. I plant the seeds outside in the ground in mid-May, and they emerge as little plants in no time. I plant the seeds in a circle outside a tomato cage, and then train the plants to grow up the cage so the cucumbers hang in the air instead of rotting on the ground.

Every summer, I look forward to the abundance of the cucumber harvest. By midsummer when the veggies start filling up my kitchen counter, the cucumber boat ideas start flowing in. I peel and cut the cucumbers in half lengthwise, and scoop out the seeds. My favorite filling is tuna fish; it makes a great carb free lunch. Another great filling choice is hummus.
