Delicious Roasted Butternut Squash Salad

- Step 1 Peel the butternut squash
- Step 2 Cut the squash into cubes
- Step 3 Toss the squash with olive oil and roast at 400 degrees for 45 minutes until browned. Let cool

- Step 4 Assemble the salad. Start with the arugula. Add the roasted squash, crumbled goat cheese and pecans pieces.
- Step 5 Drizzle the salad with olive oil, and season with salt and pepper.
