Delicious Roasted Butternut Squash Salad

In just a few steps, this salad will impress your family and guests (When it is safe again to have dinner guests!). Roasting the squash caramelizes it and makes it the perfect complement to the salty sour goat cheese, peppery arugula, and crunchy pecans. Watch the video or follow the steps below.

5 easy steps
  • Step 1 Peel the butternut squash
  • Step 2 Cut the squash into cubes
  • Step 3 Toss the squash with olive oil and roast at 400 degrees for 45 minutes until browned. Let cool

  • Step 4 Assemble the salad. Start with the arugula. Add the roasted squash, crumbled goat cheese and pecans pieces.
  • Step 5 Drizzle the salad with olive oil, and season with salt and pepper.
